If you are craving comforting pancakes but want them to be healthy too, this is for you. Make this for a lazy weekend morning, or for when you feel like treating yourself to a hearty breakfast on a weekday!
Ingredients
- One serving of Lucuma Almond Spice protein pudding
- 2 tbsp of keto flour (we used almond)
- Optional: 1 tsp. of coconut or avocado oil
- Approximately 1/2 cup of milk
- Half a tsp of baking powder
Optional Flavors and Add-ins
- Chocolate Chip Pancakes: Stir in 1 tablespoon mini chocolate chips
- Blueberry Pancakes: Stir in 1/3 c. blueberries
- Apple Spice Pancakes: Stir in 1/3 c. of sliced apples plus 1/3 cup of applesauce
- Banana Walnut Pancakes: Mash half a ripe banana and stir in the banana and 1 tablespoon of crushed walnuts
- Pumpkin spice Pancakes: Mix in 1/2 tsp of pumpkin spice, and 1/3 c. pumpkin puree.
Instructions
- Mix all the dry ingredients in a bowl.
- Add in the milk and optional oil.
- Keep stirring until the batter is no longer clumpy.
- Oil a skillet and heat up over medium heat. When hot, spoon the pancake batter into the pan.
- Cook over low-medium heat until both sides are golden brown.

The protein pancakes are ready to flip when you notice little bubbles forming on top of the pancake, and the underside is golden (3-5 minutes), then 1-2 minutes on the other side.

Repeat with the remaining batter until all the pancakes are ready.
